Old-fashioned Meatloaf (a.k.a. Basic Meatloaf)
(Paula Deen’s Old-Fashioned Meatloaf)
Ingredients
1 lb ground beef
1 1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 egg, lightly beaten
8 ounces canned diced tomatoes (without juice)
1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard
Directions
Preheat oven to 375 degrees F.
Mix all meat loaf ingredients well and place in a baking dish. Shape into a loaf.
Topping:
Mix ingredients for topping and spread on loaf.
Bake at 375 degrees F for 1 hour.
Servings: 4 servings
Prep Time: 10 min
Cook Time: 1 hour

Mine is similar, but instead of quick oats, I soak bread crumbs in milk. I will try adding tomatoes next time. Thanks!
My mother always soaked her bread crumbs, even in water. I learned the hard way. Made meatballs without soaking bread crumbs. They came out like golf balls.
Use the brand “Only Oats” and you can serve it to people who can’t eat gluten. You can find Only Oats at the Bulk Barn and some health food stores. You can also use rice as the filler to keep it wheat-free.
